Chocolate Chip Cookies, made from RYE!

Chewy Chocolate Chip Rye Cookies
Ingredients (makes ~24 cookies)

1 cup (2 sticks) unsalted butter, softened

1 cup packed brown sugar

½ cup granulated sugar

2 large eggs
-
2 tsp vanilla extract
-
2 1/2 cups rye flour
-
1 tsp baking soda
-
½ tsp baking powder
-
½ tsp fine sea salt
-
1 ½ cups dark chocolate chips

Optional: ½ cup chopped walnuts or pecans
Instructions

Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.

Cream butter and sugars – In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy (2–3 min).

Add eggs and vanilla – Mix in eggs one at a time, then stir in vanilla.

Mix dry ingredients – In a separate bowl, whisk together rye flour, all-purpose flour, baking soda, baking powder, and salt.

Combine – Gradually add dry ingredients to the wet mixture until just combined.

Stir in chocolate chips (and nuts, if using).

Scoop and bake – Drop heaping tablespoons of dough about 2 inches apart on baking sheets.

Bake 10–12 minutes, until edges are set but centers look slightly soft.

Cool on the baking sheet 5 minutes, then transfer to a wire rack.
