Chocolate Chip Cookies, made from RYE!

Chewy Chocolate Chip Rye Cookies

Ingredients (makes ~24 cookies)

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 cup packed brown sugar

  • ½ cup granulated sugar

  • 2 large eggs

  • 2 tsp vanilla extract

  • 2 1/2 cups rye flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp fine sea salt

  • 1 ½ cups dark chocolate chips

  • Optional: ½ cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.

  2. Cream butter and sugars – In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy (2–3 min).

  3. Add eggs and vanilla – Mix in eggs one at a time, then stir in vanilla.

  4. Mix dry ingredients – In a separate bowl, whisk together rye flour, all-purpose flour, baking soda, baking powder, and salt.

  5. Combine – Gradually add dry ingredients to the wet mixture until just combined.

  6. Stir in chocolate chips (and nuts, if using).

  7. Scoop and bake – Drop heaping tablespoons of dough about 2 inches apart on baking sheets.

  8. Bake 10–12 minutes, until edges are set but centers look slightly soft.

  9. Cool on the baking sheet 5 minutes, then transfer to a wire rack.
